For The Chicken Marinade:
- 4tbsp olive oil
- 3 cloves garlic, crushed
- 2tsp cumin
- 1tsp smoked paprika
- 1tsp ground coriander
- 1tsp Ras El Hanout
- ½tsp ground cinnamon
- 1 lemon, juice and zest
For The Wraps:
- 500g cooked chicken, either leftover or rotisserie
- 4 flatbreads
- 200g readymade tzatziki
- 1 tomato, diced
- ½ cucumber, diced
- 1 red onion, thinly sliced
- Few sprigs of dill, to serve
Method:
- Combine all the ingredients for the marinade in a large bowl. Shred the chicken into large chunks and coat it in the mixture. Leave to marinate for an hour to let the flavours develop, if you have time.
- Sprinkle the onion with a little salt and leave to soften while you cook the chicken.
- Bring a large frying pan to a medium high heat and add the chicken. Cook until hot through and golden, about 10mins.
- Warm the flatbreads, top with tzatziki, the spiced chicken, tomatoes, cucumber, red onion and dill.
